In celebration of sea’s greatest delicacy, Cala Luna in Mosman and North Sydney has launched a flight of freshly shucked oyster varieties matched to premium wine.

Ideal for those who like to sample a little of everything, the flight includes three different oyster varieties paired to three different sommelier selected wines. Among the line-up is the rare Angassi oyster, Australia’s only native oyster species prized for its intense flavour.

Instead of ordering the standard dozen or half dozen, for just $39, diners can try each of the following:

  • Angassi oyster matched to Villa Jolanda Prosecco NV. Delicate aromas of grapefruit and a creamy palate expertly balance the meaty flesh of the Angassi oyster
  • Sydney Rock oyster matched to Pala Fiori Vermentino di Sardegna. An intense floral and thyme nose with good depth complement the succulent flavour of the Sydney Rock variety.
  • Pacific oysters matched to the Leeuwin Estate Art Series Riesling. This stunning Riesling from the west with lime and citrus accents matches well with the softness of the Pacifics.

Each flight comes with Cala Luna’s famous vinaigrette and house-made sourdough. Prefer to sub a wine match? No problem, simply ask for a replacement from the oyster and wine experts on-hand.
